Today was a scorcher full of meetings in Beijing. I started the day in a coat and tie and ended in an undershirt and sweaty socks. Fill in what you like.

    There is a dish described as “Unidentified gelatinous slices of something. Did not ingest. Tried not to look at.” I suspect that the item in question is sliced egg, preserved duck egg. See wiki entry http://en.wikipedia.org/wiki/Fermented_egg
    They can be quite tasty. An acquired taste akin to blue cheese for some.
